It was during the Ottoman Empire that baklava became what we know today. There are many variations, with one or two layers of dried fruit, pistachios, walnuts, and/or almonds inserted between the layers of phyllo dough.
Each region, whether in the Middle East or the Balkans, has developed its own slightly different version, often using different nuts and spices.
The Turks considered baklava a dessert for the wealthy. The Sultan offered it as a special gift. This is understandable, given the skill required to prepare phyllo dough. Some bakers must even complete an apprenticeship before they are ready to hand-make this paper-thin dough.
